Based on the idea that crunchy sound of sweat and sour pork at chewing moment can represent its taste, a correlation between chewing sound and taste of sweat and sour pork was studied in this journal. Five different sweat and sour pork samples were gathered for the experiment, and ten different subjects were participated to evaluate taste and chewing sound using Mean Opinion Score (MOS) test method. To transfer MOS test result to scientific measure, chewing sounds were analysed using a sound processing method. As a result, sweat and sour pork with best score in taste has crunchy chewing sound that stimulates appetites and has provided better mouth-feeling. This chewing sound and taste correlation study can later applied to the food advertisement for more appetite stimulating sounds to attract customers, or used to guarantee taste of fried food in manufacturing site as one of evaluation method. Also, this research can be expanded to different foods with its own chewing characteristics. © 2017 International Information Institute.
